Teriyaki Pork Bowls

Ingredients

  • 1 lb ground pork
  • Cooked jasmine rice
  • Teriyaki or Soyaki sauce
  • Crispy onions
  • 1 cucumber
  • 1 jalapeno
  • Shredded carrots
  • 1/2 cup rice vinegar
  • 3 Tbsp sugar
  • 1/2 tsp salt
  • 1/2 tsp pepper

Directions

  1. Thinly slice cucumber and jalapeno and add to a bowl with a handful of shredded carrots. Add vinegar, sugar, salt, and pepper, stir to combine
  2. Cover bowl of veggies and put into fridge for at least 3 hours but up to 24 hours
  3. In a medium pan cook pork until brown. Add as much Teriyaki sauce as you want and let cook for an additional 2-3 minutes
  4. In a bowl add cooked rice, pork, veggies (without vinegar liquid), and crispy onions
