Sweet Potato Hash with Sausage and Eggs

Ingredients

  • Olive oil
  • 2 small/med sweet potatoes chopped into small pieces about 1/2 inch
  • 1 onion, chopped
  • 3 bell peppers (red, orange, yellow), chopped
  • 1/2 lb sausage
  • 1/2 teaspoon paprika
  • Salt and black pepper
  • Red pepper flakes
  • 4 eggs

Directions

  1. Preheat oven to 400 degrees
  2. Heat an oven safe pan over medium heat and add some olive oil. Once sizzling, crumble the sausage into the pan, and stir while cooking to evenly brown. Sprinkle with a pinch of red pepper flakes
  3. When sausage is about 3/4 of the way done, add the onions and peppers and continue to cook and stir until the sausage is browned and the onions and peppers are soft and fragrant. Put into large bowl and set aside
  4. Add some more olive oil to pan. Add the chopped sweet potatoes and stir to coat. Sprinkle with paprika, salt, and pepper to taste
  5. Cook and stir, uncovered, until the outside begins to brown, then cover the pan and continue to cook to soften the inside of the potatoes, uncovering to stir once in a while. This step should take about 7 minutes total, give or take
  6. Once potatoes are softened and browned add sausage mixture back to pan and stir to combine. Create four indents in mixture where you will crack each egg then carefully crack the eggs into the spaces
  7. Put pan in oven to bake the eggs, about 10-15 minutes
  8. Serve hot and enjoy
