Ramen Noodle Salad

Ingredients

  • 1/4 cup of sliced almonds
  • 1/4 cup rice vinegar
  • 1/2 cup olive oil
  • 3 Tbsp soy sauce
  • 1/2 cup sugar
  • 1 12 ounce package of prepackaged broccoli slaw mix
  • 1 14 ounce package prepackaged cole slaw mix
  • 1/4 cup sunflower seeds
  • 2 packages of ramen noodles (either beef or oriental flavor)

Directions

  1. Preheat the oven to 300°F.
  2. Prepare dressing by whisking olive oil, vinegar, soy sauce, and sugar in a medium bowl until sugar dissolves. Set aside.
  3. In a large bowl, combine the broccoli slaw and coleslaw.
  4. Break the ramen noodle packages into small pieces (no bigger than 1/2 inch) before opening. Add the broken noodles to the slaw mix, reserving the seasoning packets.
  5. Add almonds and sesame seeds into the slaw mix.
  6. Combine the seasoning packet contents with the dressing and mix.
  7. Pour the entire dressing over the slaw mixture and mix well.
  8. Refrigerate the mixture for 3 hours or overnight. Serve chilled.
