Marshmallow Popcorn
Ingredients
- 1 (3.2 ounce) bag microwave popcorn
- 1/2 cup unsalted butter
- 1 cup packed light brown sugar
- 1 tablespoon light corn syrup
- 3 cups mini marshmallows
- 1 tsp vanilla
Directions
- Pop popcorn and place in a large bowl, removing any un-popped kernels
- Melt butter in a medium saucepan over medium low heat. Add brown sugar and corn syrup and cook, while stirring, until mixed well. Add marshmallows and vanilla and stir continuously until all melted, about 5 minutes
- Pour mixture over popcorn and mix well with soft spatula. Spread popcorn out on a parchment paper lined baking sheet and let sit for about 10 minutes to set up
