Jalapeno Chicken

Ingredients

  • 2 large chicken breasts
  • 1 white onion, diced
  • 1 jalapeno, sliced
  • Salt
  • Pepper
  • Garlic powder
  • Onion powder
  • Cornstarch
  • Olive oil
  • 2/3 cup water
  • 2/3 cup brown sugar
  • 2/3 cup teriyaki sauce
  • 2 tablespoons minced garlic
  • Cooked white rice

Directions

  1. Dice chicken breast into cubes and put in a medium sized bowl. Season with salt, pepper, garlic powder and onion power and then generously sprinkle chicken with cornstarch (eyeball it) and use a spoon to mix up to make sure it’s all coated well
  2. In a large pan drizzle a little olive oil and then cook chicken over medium heat. Once cooked remove and add to a plate
  3. Add onion and jalapeno to pan and cook for 10 minutes
  4. While onion and jalapeno are cooking make sauce by whisking together brown sugar, water, teriyaki sauce and minced garlic
  5. After veggies have cooked for 10 mins add chicken back into pan and then whisk in sauce
  6. Bring to a boil and then down to a simmer and let cook until sauce becomes thicker and a deep brown color. Around 15 minutes
  7. Once sauce is thick enough for your liking remove from heat and serve over cooked rice
