Jalapeno Chicken

Ingredients
- 2 large chicken breasts
- 1 white onion, diced
- 1 jalapeno, sliced
- Salt
- Pepper
- Garlic powder
- Onion powder
- Cornstarch
- Olive oil
- 2/3 cup water
- 2/3 cup brown sugar
- 2/3 cup teriyaki sauce
- 2 tablespoons minced garlic
- Cooked white rice
Directions
- Dice chicken breast into cubes and put in a medium sized bowl. Season with salt, pepper, garlic powder and onion power and then generously sprinkle chicken with cornstarch (eyeball it) and use a spoon to mix up to make sure it’s all coated well
- In a large pan drizzle a little olive oil and then cook chicken over medium heat. Once cooked remove and add to a plate
- Add onion and jalapeno to pan and cook for 10 minutes
- While onion and jalapeno are cooking make sauce by whisking together brown sugar, water, teriyaki sauce and minced garlic
- After veggies have cooked for 10 mins add chicken back into pan and then whisk in sauce
- Bring to a boil and then down to a simmer and let cook until sauce becomes thicker and a deep brown color. Around 15 minutes
- Once sauce is thick enough for your liking remove from heat and serve over cooked rice
