Egg Roll in a Bowl

Ingredients

  • 2 Tbsp olive oil
  • 1 white onion, diced
  • 1 Tbsp minced garlic
  • Salt, to taste
  • 2 Tsp ground ginger
  • 1 lb ground pork
  • 2 Tbsp soy sauce
  • Garlic powder
  • Onion powder
  • Crushed red pepper flakes
  • Bag of coleslaw mix
  • Cooked white rice
  • Sliced green onion
  • Drizzle of sesame oil

Sauce

  • 1 cup mayo
  • 2 Tbsp sweet chili sauce
  • 2 Tbsp sriracha

Directions

  1. In a pan over medium-high heat, add olive oil and saute the diced white onion with garlic, salt, and ginger for about 6-8 minutes.
  2. Add ground pork
  3. Once the pork is cooked, add soy sauce and a few dashes of garlic powder, onion powder, and crushed red pepper flakes.
  4. Add half of the bagged coleslaw mix, cover and simmer for five minutes stirring frequently.
  5. While that is simmering, make sauce.
  6. After simmering, add a little more salt and drizzle some sesame oil. Mix well.
  7. Distribute cooked rice to personal bowls and add some pork mixture to each bowl. Top with as much sauce as desired and then add green onion. Enjoy!
