Crockpot Zuppa Toscana

Ingredients

  • 1 pound italian sausage meat (without casings, mild or spicy)
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 3 cups chicken broth
  • 4 medium potatoes, peeled and cubed
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • A pinch of red pepper flakes
  • 3/4 cup heavy cream
  • 2 cups kale, roughly chopped
  • 1/4 cup grated parmesan cheese

Directions

  1. In a large pan cook the Italian sausage with the chopped onion over medium-high heat until sausage is browned and the onions are softened. I like to use a ground meat chopper to break up the sausage
  2. Add the minced garlic and cook for an additional 2 mins
  3. Transfer the browned sausage mixture to crockpot and add in the broth, chopped potatoes, salt, pepper, and red pepper flakes
  4. Stir all the ingredients together to combine them evenly
  5. Cover and cook on low for 5-6 hours (until potatoes are nice and tender
  6. Once the potatoes are tender stir in the chopped kale, cream, and grated Parmesan cheese. Mix well and enjoy!
