Coconut Curry Chicken Salad Sandwiches
Ingredients
- 2 1/2 cups shredded chicken
- 1/2 cup sliced green onion
- 1/4 cup shredded carrots
- 3/4 cup cut up grapes
- Croissants
Dressing
- 3/4 cup canned coconut milk
- 1/2 cup sugar
- 1/2 cup mayo
- 2 Tbsp curry powder
- 2 tsp ground ginger
- 2 tsp garlic powder
- pinch of salt and pepper
Directions
- Toss all ingredients together in large bowl (except for dressing and croissants)
- In a separate bowl, whisk together ingredients for dressing.
- Add the dressing slowly to chicken mixture and stir until just coated.
- Cover and put in fridge for an hour.
- Stuff inside croissants and enjoy.
