Chicken Fajita Soup

Ingredients

  • 2 lbs. chicken breasts
  • 1 onion, diced
  • 1 green pepper, diced
  • 3 tablespoons minced garlic
  • 1 tablespoon butter
  • 6 oz. cream cheese
  • 2 (10 oz.) cans diced tomatoes with green chiles
  • 2 and 1/2 cups chicken broth
  • 1/2 cup heavy whipping cream
  • 1 packet of taco seasoning
  • Salt and pepper to taste

Directions

  1. Preheat oven to 400 degrees
  2. Place chicken on baking sheet and bake in oven until chicken is no longer pink inside, about 30-40 minutes
  3. Shred chicken and set aside
  4. In a large saucepan saute green pepper, onion, and garlic in 1 tablespoon of butter until they are translucent
  5. With a wooden spoon mash the cream cheese into the veggies so that it will combine smoothly as it melts
  6. Once cream cheese is melted add the canned tomatoes, chicken broth, heavy whipping cream, and taco seasoning
  7. Simmer on low uncovered for 20 minutes
  8. Add shredded chicken, cover and simmer for 10 minutes
  9. Add salt and pepper to taste and serve
