Chicken and Dumplings
Ingredients
- 2 tbsp olive oil
- 2 tbsp butter
- 1 yellow onion, diced
- 3 tbsp minced garlic
- 1 tsp salt
- 1 1/2 tsp italian seasoning
- 1/4 tsp pepper
- 2 tbsp flour
- 5 cups chicken broth
- 1 cup whole milk
- 1 1/2 cups frozen peas and carrots
- 1 1/2 cup shredded chicken
- 1 box of Red Lobster cheddar bay biscuit mix
- 1/2 cup shredded cheddar cheese
Directions
- Add oil and butter to a stock pot, once butter is melted add diced onion and stir until everything is coated in the oil
- Add salt, italian seasoning, and pepper. Sauté for 6 minutes. Add garlic and flour and cook for a minute while stirring
- Add one cup of chicken broth and stir until smooth and then add the other 4 cups of chicken broth. Add the milk and frozen veggies and bring to a simmer. Add shredded chicken
- In the meantime make dumpling mix. To a large bowl add biscuit mix, cheese, the flavor packet, and a cup of the chicken broth from the pot. Mix together with a spoon and if it still seems dry add an extra quarter cup of the chicken broth. You want it to be sticky
- Spray a cookie scoop with cooking spray. Drop scoops of the batter into the simmering liquid. Try to drop the batter so that the dumplings are not touching. Do not stir
- Cover the pot and let cook for 12 minutes uninterrupted. After they have cooked gently break apart the dumplings. Stir well making sure that all of the dumplings are coated in the liquid. Enjoy!
