Cajun Chicken Pasta
Ingredients
- 2 chicken breasts cut into bite sized chunks
- 12 oz rotini pasta
- 2 tablespoons olive oil
- 2 tablespoons cajun seasoning
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Black pepper to taste
- 2 tablespoons minced garlic
- 1 tablespoon butter
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 1/4 cup milk
- Italian seasoning to taste
Directions
- Boil and cook pasta al dente according to box directions (around 11 mins). Drain and set aside
- In a medium sized bowl add cut up chicken then add cajun seasoning, garlic powder, onion powder and black pepper. Mix well
- In a large skillet heat oil over medium heat. Add chicken and cook until fully cooked through then set aside on a plate
- In the same skillet melt the butter then add minced garlic and saute for a minute. Add chicken broth and heavy cream and bring to a slight simmer. Stir in cheese and mix til fully melted and smooth
- Add back in the cooked pasta and chicken and toss to coat everything evenly. If the sauce seems too thick add in the 1/4 cup milk and stir to thin out a bit. Let simmer for another 2-3 mins
- Add Italian seasoning and enjoy
