Cajun Chicken Orzo
Ingredients
- 2 large chicken breasts, cut into small strips
- 3 Tbsp cajun seasoning
- 1 Tsp salt
- 1 Tbsp olive oil
- 1/2 Tbsp butter
- 1 onion, finely diced
- 2 garlic cloves, minced
- 2 Tbsp chopped sun-dried tomatoes
- 1 Tbsp tomato paste
- 1 cup Orzo
- 1 cup chicken broth
- 1/4 cup heavy cream
- Handful of grated parmesan
Directions
- Mix chicken with Cajun seasoning and salt.
- Heat butter and oil in a large pan.
- Pan fry the chicken until it colors.
- Add onion, garlic, sun-dried tomatoes, and tomato paste. Cook over low heat for 5 minutes, stirring frequently.
- Add orzo and cook briefly (about one minute) before adding chicken broth. Simmer, cover, and cook for around 20 minutes, stirring occasionally.
- Uncover and test the orzo, it should be almost tender.
- Add cream and grated parmesan
- Mix well and enjoy
