BBQ Chicken Sweet Potatoes
Ingredients
- 4 sweet potatoes
- Olive oil
- 1 lb. chicken breast, shredded
- 3/4 cup BBQ sauce
- 1/2 red onion, finely diced
- Salt and pepper to taste
- Shredded cheese
- Pickled jalapenos
Directions
Baked Sweet Potatoes
- Preheat oven to 400 degrees
- Rinse and scrub potatoes
- Poke holes all over potatoes using a fork
- Drizzle with olive oil and sprinkle with salt and pepper
- Wrap potatoes in a large piece of aluminum foil, making sure the foil wraps around the potato at least twice. Secure the ends so no juice escapes the packet.
- Place wrapped potatoes on a baking sheet
- Bake potatoes for 45-60 minutes or until they are cooked all of the way through, keep oven on at 400 degrees
- Place chicken on baking sheet and bake in oven until chicken is no longer pink inside, about 30-40 minutes
- Once chicken is completely cooked, shred with a fork and add BBQ sauce. Stir until combined
- Cut open sweet potatoes and stuff with BBQ chicken. Top with diced red onion, salt, pepper, and pickled jalapeno
