Banoffee Pie

Ingredients

  • 3 cups crushed graham crackers

  • 1/2 cup sugar

  • 12 tbsp butter, melted

  • 13.4 oz. can of dulce de leche

  • 2 large bananas, sliced

    Whipped cream

  • 2 cups heavy whipping cream

  • 1/4 cup sugar

  • 1 tsp vanilla extract

  • 1 king sized toffee symphony bar

Directions

  1. Preheat oven to 350
  2. Use food processor to grind graham crackers into fine crumbs. Stir crumbs and sugar together in medium bowl then stir in melted butter. It should be thick and sandy
  3. Pour mixture into ungreased pie dish. Pat crumbs down using the bottom of a measuring cup with medium force into the bottom and up the sides to make a crust (don't pack down with heavy force or it will make the crust too hard)
  4. Bake for 15 minutes, cool for 15 minutes
  5. Make the whipped cream by using a mixer with a whisk attachment and whipping the heavy cream, sugar, and vanilla on medium high speed until medium peaks form (about 3-4 minutes)
  6. Spread dulce de leche on top of crust and top with the sliced bananas (1-2 layers). Top with whipped cream Chop up symphony bar into small pieces and sprinkle on top. Cover and refrigerate for at least 2 hours
